Cookie Cakes


After reading Floral and Feather's recipe for Triple Chocolate and Pecan Cookies I was inspired to pull together the ingredients in my cupboard. I was aiming to make the same thing but after a slight flour disaster and lack of chocolate I created, what I am deeming Cookie Cakes, rather than a baking disaster  They tasted so good and had a cake, rather than cookie dough/biscuit texture.

Here's how I stumbled upon these delicious treats...


You will need the ingredients and amounts pictured above.

Stir the baking powder into the flour. Then whisk together the sugar and eggs until very fluffy and airy. Add the sugar and eggs to the dry mix and stir in the chopped chocolate and pecans.


Spoon the mixture (mine was very runny) on to a greased baking tray and "BAKE!" (as Sue and Mel #GBBO would say) for 8-10 minutes. I found the bottom of these turn very quickly. Mine didn't look cooked on top, but then I was waiting for them to turn golden and cookie like, when in fact I had created something completely different!

  1. Oh I like the look of your version! I found the mixture for mine was quite runny too, but I guess that's because there's so little flour. Cake cookies are definitely the way forward! :)

    1. I had a flour disaster, which is why I think they turned out like cakes! My gram to cup conversion was completely wrong. They were delicious though :) Thanks for the inspiration.

  4. Ha! These look totally delicious, And funnily enough I have always thought it would be a good idea. I much prefer the flavour of cookies, but I love the texture of cake, combining them together - perfection!

    I'm definitely going to bookmark this and have a go!

    1. Thanks! You might find you have to experiment - I got this result completely by accident, I'm still getting to grips with cup measurements!
